Commercial Fat, Oil & Grease Disposal 

Food service facilities that pour fats, oils and grease (FOG) down the drain cause more blockages and overflows in our  wastewater collection system than any other industry. This source of pollution can be prevented through responsible management and proper maintenance. To address this issue, the city has developed an oil and grease management program.

All non-residential facilities preparing, processing or serving food are required to have a grease trap or interceptor discharge permit issued by GRU, along with an approved grease interceptor or grease trap. Automotive-related facilities including, but not limited to, car washes and automobile repair shops – which may add petroleum-based oil to the collection system – are required to have an approved oil/water separator.
